     BUTCHER INSTRUCTIONS FOR A MIXED QUARTER 

    NOTE:​​​
    • If you ordered a Mixed Quarter, you have come to the right place!  If you ordered a SIDE OR A SPLIT SIDE, click here....​
    • Please complete all entries, leaving something undone could cause grief when you try to send this form to us!
    • We reserve the right to substitute cuts due to availability
    • Don't forget to press SEND at the end of this form to email us a copy of your instructions!​

    Cutting Instructions for your Order:

    RIB
    From the RIB, YOU CAN GET THE PRIME RIB ROAST  OR YOU CAN GET other RIB options...
    Normally the Prime Rib Roast is comprised of 7 ribs, because you are ordering a Mixed Quarter you only get the following options:  
    The balance of the Prime Rib, if there is any, will be cut into steaks.
    ​If you DO NOT WANT a Prime Rib Roast, then you can get the following options:

     SHORT LOIN
    SIRLOIN
    TIP

    ROUND

    THE BRISKET, SHANK, SHORT PLATE & FLANK
    BONES, TRIMMINGS & ORGAN MEATS:
    Remember, there is only one set of Organ Meats in a Beefer and they will be distributed to SIDE orders first.  If there are some organ meats remaining, we will try and provide them to you as per your request below but there is NO GUARANTEE of availability!  (Organ Meats are not part of your order weight)
